4 (8 to 10-ounce, 1-inch thick) sirloin strip steaks
1 1/2 tablespoons (a palmful) ground Ancho chiles or dark chili powder
1 1/2 tablespoons (a palmful) ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cayenne pepper
1 large red onion, cut into 4 thick slices
Extra-virgin olive or vegetable oil, to coat
Salt and pepper
Serving suggestions:
Cracked Cornbread and Cheese Squares
Mexican Salad
Preheat grill pan or indoor electric grill to high heat. Combine spice rub ingredients: ground Ancho chile, cumin, coriander, and cayenne. Rub spice blend into steaks.
Coat sliced red onion with a drizzle of oil. Season with salt and pepper.
Grill steaks and onion slices 5 minutes on each side. Remove from heat. Let meat stand 5 minutes for juices to redistribute. Season steaks with salt. Top with separated rings of red grilled onions. Serve with hot Cracked Cornbread and Cheese Squares and Mexican Salad.
Anyway, it got me to thinking. Rachael has like 8 billion recipes, but almost all of them are of the indoor variety. She really should focus more on grilling and BBQ. After all, based on the steaks, she knows her stuff. And, BBQ is the most uniquely American and tasty culinary tradition I can think of. Bobby Flay and the guy from Grill University (or whatever) shouldn't have the monopoly on outdoor taste treats.
I wonder how Rachael's steaks would fare against some of the big name 'cues? For instance, I once went to the Houston Livestock Show and Rodeo, where they have a MONSTER barbecue world championship. People were doing stuff with grills that you just can't describe. Amazing food. AMAZING.
If I, a grilling novice, could make Rachael's steaks taste that good, I cannot imagine what one of the pros at the HLSR event could do! They'd have better meat and they would know how to really make a grill do its thing!
If you aren't familiar with the Houston Rodeo, you should try to get down there some time. If you are food buff, you will be amazed by all of the great concession options and, as mentioned, that World Championship Barbecue competition.
They also have live music outside, carnival rides, and just about everything else you'd expect from massive outdoor festival. Oh, and of course, there is the livestock show and a b*tt-kickin' rodeo. I am not a rodeo expert, but even I enjoyed watching it. The participants are among the best of the best. Plus, if you like a bit of country music, they book all of the biggest names in the biz to play at this thing. As I understand it, George Strait closes things out every year with an awesome show.
I went two years ago after the person I went with scored two tickets on the lower level of the dome on a corner from their boss. It probably would have been better to sit right in the middle, but the corner worked out pretty well. We really didn't have a blind spot for any of the action and I was really happy with the view of the stage during the concerts. We had the same seats for all three days we were there. I mention that because finding Houston Rodeo tickets isn't always the easiest thing in the world.
OK, go to the rodeo and grill some Rachael Ray steaks. Be happy!
